Sweet Chestnuts
Ingredients:
1 kilo chestnuts
1 teaspoon salt
For syrup:
1500 gr sugar
750 ml water
2 vanilla pods
Juice of 2 lemons
Method:
- Wash the chestnuts thoroughly. In a pot, boil water with a teaspoon of salt. When it comes to a boil, add the chestnuts and boil for 20 minutes.
- In another pot, heat water. As soon as the chestnuts boil, drain them and put them in the clean hot water you have previously prepared. Remove carefully their outer shell. It is important to keep the chestnut hot so that their shell can be removed easily.
- Place all the ingredients for the syrup in a pot. As soon as they come to a boil and the syrup thickens slightly, add the peeled chestnuts and boil for 20 minutes over a low heat. Add the fresh juice of 1 lemon 5 minutes before the boiling is completed.
- Remove the pot from the heat and cover it with a cotton towel. After 15 hours, boil the syrup again over a low heat until it thickens and then add the rest of the lemon juice and the 2 vanilla pods.
- Place the sweet while still hot in hot sterilized jars, rotate and set aside to cool for at least 7 hours.
