Chestnuts Jam
Ingredients:
1,5 kilo chestnuts
2 kilos sugar
100 ml water
3 lemons
4 vanilla pods
½ wine glass of cognac
Method:
- Wash the chestnuts thoroughly.
- In a pot, boil water with a teaspoon of salt. When it comes to a boil, add the chestnuts and boil for 20 minutes.
- In another pot, heat water. As soon as the chestnuts boil, drain them and put them in the clean hot water you have previously prepared.
- Remove carefully their outer shell. It is important to keep the chestnut hot so that their shell can be removed easily.
- Take the peeled chestnuts and boil them for 5 minutes in clean water.
- Then, drain them.
- In a pot, place the boiled chestnuts with the sugar and 200 ml water. Boil for 5 minutes and remove from the heat.
- Use a hand blender to mash the chestnuts giving a velvety texture to the jam.
- Boil the jam until it thickens and add the 4 vanilla pods.
- Then, add the juice of 3 lemons and the half glass of cognac 10 minutes before the jam is ready.
- Place the jam while still hot in hot sterilized jars, rotate and set them aside to cool for at least 7 hours.
